If you're not sure what sort of organist should you become, don't think too much. Sit down and play. Then you'll find many answers. It's better to do the work than to think about it, if you know of I mean. You probably feel confused because you keep comparing yourself with others who have started playing earlier than you, who graduated from famous college etc. The thing is, you may not have their strengths but they don't have yours either. Whenever you feel lost or seeking a silver bullet, sit down and play. That's how you find out your strengths and purpose. [Thanks to John]
