I know of some organists who only play pieces that are familiar to them. Some of them don't learn anything new now. When you hear a name of such organist, you can count certain pieces will definitely be on the program. I think there's more productive path: We become better when we learn something new every day. As difficult as it seems to accept for some people, it's absolutely necessary to keep striving. Keep failing until you succeed. Until it becomes a habit. A habit you will be glad you have built for yourself.
