I was thinking the other day, if it's ever too late to play the organ? Some of our older students are in their 80's.
Can they still improve?
Sure, your body gets stiffer with years but the mind...
The mind can be developed regardless of age, if you put your focus on it.
Remember, organ playing is primarily a mental activity.
I would say, as long as you can sit on the organ bench, you can play it.
As long as you can play it, you can practice.
As long as you can practice, you can still improve.
Maybe it would be difficult to play some very virtuoso music at this age but the point is to be better today than yesterday.
Maybe it would take longer to master certain pieces but who's counting, right?

Don't have an organ at home?
Download paper manuals and pedals, print them out, cut the white spaces, tape the sheets together and you'll be ready to practice anywhere where is a desk and floor. Make sure you have a higher chair.
